This recipe is easily halved, doubled or quadrupled as appropriate. . The Tabasco is for flavour as well as 'tang', so start with the recommended amount and then adjust as appropriate. The degree of hotness is related more to the cayenne pepper which is optional and should be varied to suit your taste. You can use light mayonnaise if you like, and, once again, vary the amount slightly to obtain the thickness you prefer.







-6 hard boiled eggs

-3 teaspoons Tabasco

- 1/4 cup of Miracle Whip or   Mayo

-3/8 teaspoon dry ground   mustard

-3/4 teaspoon prepared mustard

-1/16 teaspoon salt

-1/8 teaspoon cayenne powder

-paprika (garnish)



Hard boil the six eggs by placing them in barely boiling water for about 20 minutes. To prevent blackening of egg yolks, make sure there are few bubbles in the hot water for the entire cook cycle. Peel, cut in half length-wise,remove the egg yolks, and, with a small fork, blend the yolks with the mayonnaise, Tabasco, mustard, salt, and cayenne powder. Fill the empty egg white shells with the mixture. Sprinkle with paprika (optional). Cover with plastic wrap until ready to serve. Note: allowing the mixture to sit for a few hours (covered) will give it a richer and tangier taste.
