This recipe is always a great hit. If you don't like green pepper chunks, then keep the pieces large and remove or avoid them later. Don't skimp on the chili powder: it's a bit tricky the first time, but the hearty taste comes from putting in a little more chili powder than you think you need (that's the way Chili's Restaurant does it). Serves four.
-1 pound lean ground beef
-1/2 to 1+ tablespoon chili powder (to taste)
-1 cans Hunts tomato sauce
-1/2 - 1litres tomato juice (to desired consistency)
-2 tablespoons minced, dried, onions
-pepper and salt to taste (1-2 tsp)
-2 cans kidney beans
-1/8 teaspoon garlic powder
-1 large green pepper chopped
-cayenne pepper optional
-diced fresh jalapeno pepper optional
-grated cheddar cheese optional
Brown the grind beef in a large pan over medium heat. Add onion and salt and pepper and saute for a couple of minutes. Add remaining ingredients, and simmer for at least an hour. Be careful not to overheat. Adjust spice and liquid quantities to taste. When serving, optionally add grated cheese to the top.
