nancy's walnut and apple salad
 

 

I'm not really a salad lover, but I enjoyed this salad served up by our friends. Serves more than six comfortably.

Highly recommended.

 

 

Ingredients

Walnuts

-1 tbsp butter
-1 tbsp brown sugar
-1 cup walnut halves

 

6 to 8 cups mixed greens
Goat cheese crumbled- I buy the small PC roll and use most of it

 

Apples

-2 firm apples, sliced
-1 tbsp butter
-1 tbsp brown sugar

 


Dressing - equal amounts olive oil / balsamic vinegar (1/4 cup of each is plenty)  + 2 tbsp honey

 
 

A. Melt 1 tbsp butter, & 1 tbsp sugar in skillet. Saute 1 cup walnut halves over medium heat until brown and fragrant.      Remove from pan

B. Melt butter and brown sugar / add apples / saute until carmelized but al dente

 

Shake well/ assemble all ingredients just before serving (I never use all the dressing). Nancy used red leaf and romaine for the greens.

You can do the whole recipe just before serving so the nuts and apples are warm - I usually do the nuts / apples / dressing ahead.
